Amazing Blueberry Coconut Popsicles
A sweet, refreshing summer treat made with coconut milk and blueberries. SO flavourful and easy to make.
Ingredients
- 360 ml / 1 ½ cups coconut milk
- 2 tbsp maple syrup or agave nectar
- 1 tsp vanilla extract
- 190 g / 1 cup blueberries, fresh or frozen
Instructions
- Mix the coconut milk, maple syrup and vanilla in a blender until smooth.
- Add the blueberries and pulse until they've' been "smashed" but not completely blended.
- Pour the mixture into popsicle molds and freeze for at least 5 hours or overnight.

These look delicious! Do you use canned coconut milk or the kind that comes in tetra packs… the canned is a lot richer.

Thanks Jana! I use the full-fat variety which usually comes in a can. Although, you could use the lower fat variety, it would just result in a more “icy” popsicle. Hope that helps!
