Amazing Blueberry Coconut Popsicles
A sweet, refreshing summer treat made with coconut milk and blueberries. SO flavourful and easy to make.
Ingredients
- 360 ml / 1 ½ cups coconut milk
- 2 tbsp maple syrup or agave nectar
- 1 tsp vanilla extract
- 190 g / 1 cup blueberries, fresh or frozen
Instructions
- Mix the coconut milk, maple syrup and vanilla in a blender until smooth.
- Add the blueberries and pulse until they've' been "smashed" but not completely blended.
- Pour the mixture into popsicle molds and freeze for at least 5 hours or overnight.

How do I keep my coconut milk from seperating when I freeze the pops? I’m using full fat canned coconut milk.

Sara, I know this is way past when you posted this but I just made these. I put the coconut milk in a measuring cup and using a stick blender whizzed until very smooth and my pops came out perfect.

Hello, I just made these, my issue is the cocunut milk separated so the bottom of the pops have all the cream and the top are more watery. Any advice to avoid this??? Thanks.
