I’ve been craving light, hydrating foods now that Summer seems to finally be here and I decided to make a smoothie but didn’t want anything too acidic or heavy.
So I paired the lightness of coconut milk with the delicate, subtle sweetness of mango to create this smoothie.
It has a sweet, light, refreshing flavour that will make your taste buds as well as your stomach happy :-)

- 140g fresh mango, cubed
- 300ml coconut milk
- 1 tsp grated fresh ginger root
- 1 tbsp chia seeds
- 1 tsp turmeric
- Approx 6 ice cubes
- Combine all ingredients in a blender and blend until smooth
- Leave smoothie in the fridge to cool and let the chia seeds thicken for about 20 minutes*
- Serve with a straw and enjoy
*Due to the thickening properties of the chia seeds, you may find that the longer it’s left the thicker it gets.
