This is such a simple but SUCH a delicious dessert. I’m talking plate-licking level delicious.
The “cream” is in fact ice cream and I like to use a plain vanilla coconut milk ice cream (you can find all my ice cream recipes here) but you can use any ice cream you like or even serve it with some coconut whipped cream instead.
I have made this recipe at least three times now and can see myself making it many more times this summer…
Of course, this recipe would be so easy to adapt, using other fruits.
Pineapple would be so good, especially with coconut milk ice cream!
Sprinkle it with some coconut or maple sugar and grill it til it’s caramelized and juicy.
OK I need to try that now… Anyway, onto the recipe.

I am the same way with peaches lol. But they look so juicy and sweet and perfect next to that creamy cool scoop, I need to change that. It’s simple desserts like this that are my favorites–things you can whip up in 10 minutes. And the hot/cold pairing is just as good as sweet/salty. I love those sorts of contrasting recipes. The pineapple idea sounds delicious here too…but no I need to give peaches a chance! See already I’m trying to forget them again. I don’t have a grill though, might have to attempt this on the stove instead.

Thank you, Natalie! “Give peach a chance” :D I don’t have a “proper” grill either, I just use my oven’s grill setting. I really need to get one of those grills that gives those gorgeous black lines, always wanted one of them.

I feel the same way when I eat peaches! That first bite takes you back ;)
But there is an art in picking the best peaches..sometimes (many times) you pick a bad mealy terrible bunch…then the tears come!
Aimee says
Thankfully I’ve only experienced good peaches. Although, as I say, I don’t eat them often enough!
