And it tastes like you’ve been slaving away in the kitchen for hours making it.
AND it tastes iiiiiiincredible. Juicy, warm apples with sweet, spiced oats and raisins. So heavenly. I have made this three times since this batch and can tell it’s going to be a regular favourite.
The three-minute-magic of this recipe is thanks to my new favourite kitchen appliance, an Express Multi-Cooker sent to me by Crock Pot. It’s first and foremost a slow cooker but has multiple functions, such as steaming, sauteing and pressure cooking.
I used the pressure cooker function for this recipe because I wanted to see how fast I could make a delicious and easy dessert for Halloween. This was all done in under 15 minutes, including prep work.
To core out the apples, simply cut the tops off of six apples and use a melon baller to scoop out the insides (sounding Halloween-y already). The melon baller makes it soooo quick and easy but you could also use a small sharp knife or spoon.
Then you add the filling and cook the apples, with a drop of apple juice or water, for just 3 minutes on the pressure cooker setting.
The result: warm, soft, and tender apples filled with sweet and crunchy oats. Tastes like apple crumble!
To make this a tiny bit healthier, you can swap the brown sugar for a couple of tablespoons of maple or date syrup or just leave the sweetener out altogether because the natural sweetness of the apple juice and raisins is all you really need!
It works as either a wonderfully comforting Autumn / Halloween dessert, served with some vegan ice cream or as an indulgent breakfast just as it is.
I did attempt to make this more seasonally appropriate, by carving a little Jack-O-Lantern face into the apples but I’m afraid I failed miserably with my carving skills. Still, it’s a wonderful dish for Halloween that both kids and adults will love.
- 6 Gala apples
- 8 tbsp whole oats
- 4 tbsp brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground mixed spice
- 3 tbsp sunflower oil, or other mild-tasting vegetable oil
- 3 tsbp raisins, (optional)
- 4 tbsp apple juice
- In a medium bowl, combine oats, spices, sugar and raisins (if using).
- Chop the tops off the apples and use a melon baller to carve out the insides.*
- Spoon the oat mixture into the apples until they are filled to the top.
- Place the apples inside the crock pot with a few tablespoons of apple juice (or water) to cover the bottom of the bowl.
- Choose the manual setting on your multi cooker and cook for three minutes on high pressure, making sure the steam valve is locked.
- Once the timer has finished, press stop and release the steam. Once the steam has been released, carefully open the lid and serve the apples immediately. The longer they sit in the heat, the mushier they will get, so best to serve them quickly!
- For an indulgent dessert, serve with a scoop of vegan ice cream or just serve as it is for breakfast or as a treat. Enjoy!
