It’s January which means it’s time for Veganuary!
If you’ve not heard of Veganuary before, it’s a campaign that challenges people to try out the vegan lifestyle for the month of January and this year over 40,000 people are taking part.
So if you’re one of those people and you’re wondering what on earth to make for dinner when you get home from work, then below is a round-up of 19 Easy Vegan Weeknight Dinners that can be made in under 30 minutes, with minimal fuss.
But if you’re feeling extra lazy, there are always shortcuts you can take. Being vegan doesn’t mean hours of prep and cooking every day, like some people assume.

I have just stumbled on your website, by seeing the leek and mushroom pie. I can’t wait to try it and other recipes there, they look amazing and convenient to do. I have noticed you use couscous a bit and I have recently discovered this is over-rated and used by vegans because it is thought to be the healthy option. But other grains are much more nutrient rich ie buckwheat, bulgar wheat, aramanth and quinoa. I just thought it useful to pass this on.

#18 Vegetable Chow Mein is not vegan. It is made with Oyster sauce.

I know it might be hard to read food labels from all the way up there on that high horse, but there are vegan versions of oyster sauce.

Actually, there is a strong argument to be made that oysters are suitable for vegans. Google it. (Obviously ensure that the oyster sauce you are using is actually made from oysters; the more sustainable, the better.)

Im vegetarian and always wanted to take the next step to go vegan. Originally, I thought that vegan recipes were far to complicated and expensive but this website has totally convinced me that veganism is anything but. Thank you for making me take that next step!!!
