Aloo Gobi Traybake with Chickpeas

VEGAN + GLUTEN-FREE

You will need... – Baby potatoes – Olive oil – Lime – Curry powder – Cumin seeds – Tomato puree – Red onion – Cauliflower – Tomatoes – Chickpeas - Coconut yoghurt

Par-boil the potatoes for 5 minutes, until tender

Mix all the vegetables, spices and oil together and spread on the tray. Bake for 25 minutes.

Scatter with fresh coriander

Serve with a dollop of coconut yoghurt and enjoy!
