Amazing Blueberry Coconut Popsicles
A sweet, refreshing summer treat made with coconut milk and blueberries. SO flavourful and easy to make.
Ingredients
- 360 ml / 1 ½ cups coconut milk
- 2 tbsp maple syrup or agave nectar
- 1 tsp vanilla extract
- 190 g / 1 cup blueberries, fresh or frozen
Instructions
- Mix the coconut milk, maple syrup and vanilla in a blender until smooth.
- Add the blueberries and pulse until they've' been "smashed" but not completely blended.
- Pour the mixture into popsicle molds and freeze for at least 5 hours or overnight.

Once I discovered this recipe I have never gone back! Now my kids even eat them all the time and I have to keep several trays going at a time. We started with blueberries (but purée them) and now do other fruits. I always come back to the blueberry though. Sooooo yummy!

These look great! I’m worried my little ones won’t enjoy the clumps of blueberry, though... Do the blueberries have to be only ‘smashed’ or is it ok to blend it all the way through instead?
