Why are whoopie pies called whoopie pies? After some googling around I read that apparently the name whoopie comes from the exclamation of delight when kids found these in their lunchbox, “whoopie!” But why are they called pies? They’re more like a cookie sandwich or sometimes they’re more like little cakes. I think they should be called “Yay Cookie Sandwiches!”
Anyway, they’re not something I’ve ever tried before (we don’t get them over here in the UK) so I was curious to try them out. These gingerbread cookies use the dark, bittersweetness of molasses to add a warm and wholesome flavour whilst the orange buttercream filling adds lightness and zest in contrast. They are so much fun to make and amazing to eat!
Mini Gingerbread Whoopie Pies with Orange Buttercream Filling
- For the gingerbread cakes:
- 283 g 2 1/2 cups wholemeal plain flour
- ½ tsp salt
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground mixed spice
- 115 g 1/2 cup unsalted butter, softened
- 50 g 1/4 cup brown sugar
- 1 large egg
- 255 g 3/4 cup molasses
- 113 g 1/2 cup buttermilk
- For the buttercream filling:
- 140 g 1/2 cup + 2 tbsp unsalted butter, softened
- 280 g/ 2 1/3 cup icing sugar
- Zest of 1 orange
- 1 or 2 tbsp fresh orange juice
- optional orange food dye to boost colour
Preheat oven to 180c. and line a baking sheet with greaseproof paper.
In a bowl, stir together the flour, salt, baking powder, bicarb and spices until well combined.
In a large, separate bowl, whisk the butter and brown sugar together until light and fluffy. Beat in the egg until well mixed.
Add the dry ingredients a third at time, making sure it's well combined. Then whisk in the molasses and buttermilk.
Dollop a tsp of the mixture onto the baking tray, making sure they are spaced well apart (up to 12 per tray) and bake in the oven for 9-12 minutes until dark golden brown and hard on top.
Leave to cool on a wiring rack whilst you make the buttercream.
In a bowl, whisk the butter until light and fluffy. Add the icing sugar a third at a time and add 1-2 tbsp of fresh orange juice plus the zest. Whisk and add the food dye if using.
To make up the whoopie pie, dollop a tsp of buttercream onto one side of a cookie and sandwich together with another cookie.
