Demuths is a vegetarian cookery school located in Bath, UK, ran by chef Rachel Demuth. I have been dying to visit this place and take one of their courses! They actually have a dedicated vegan diploma which I would love to take some day. Saving up for it! Rachel is such a talented chef and I just love her passion for fresh, seasonal vegetables which is the main focus in her latest book. There are so many recipes I cannot wait to try but the ones that stand out the most for me are the Cannellini Crostini (pg 66) – Garlicky toast with pureed white beans and sun-dried tomatoes, Beetroot and Potato Patties (pg 166 – pictured below) – Served with a cumin and coriander raita (which is easy to make vegan), Indian Spiced Chickpeas (pg 190 – pictured below) – served with potatoes and spinach and the Lemon and Mint Granita (pg 51) which sounds so refreshing and perfect for spring.
