Just over two years ago, I launched my first ever book – Coconut Milk Ice Cream. I wasn’t vegan at the time, I just loved vegan ice cream! (That’s how good it is) But of course, now that I am vegan, I can appreciate it even more.
Writing, testing, photographing and launching a book was stressful and a little bit scary but was it worth it? DEFINITELY. The feeling of holding a book in your hands with your name on the cover is amazing. And I’ve learned so much from the experience too! When I create my next book, whatever and whenever that will be, I now have a good idea of what (and what not) to do. What kind of cookbook would you like to see from me next?

I own this exact same ice cream maker (expect mine is in pink!) and it’s the one I used to make all the ice cream recipes you’ve seen in my book and on my blog – so I can confidently recommend the Magimix ‘Le Glacier’ to you all.
It’s compact so it will easily fit in your freezer (or cupboard, for when you’re not using it) and to use it you simply need to freeze the bowl overnight and when your ice cream mixture is ready it takes just 15-30 minutes to churn your ice cream to perfection!
#3 Oxo Ice Cream Scoop

Again, this is (one of) the ice cream scoops I use myself and recommend in my book’s resource section. It’s the best I’ve found for creating a perfectly clean, round scoop. Plus, it’s super easy to clean – most other ice cream scoops can’t be put in the dishwasher but thankfully this one can.
#4 The Coconut Company goodies

Some of my recipes call for other coconut ingredients, besides milk. For example, my Salted Caramel ice cream is made with coconut sugar and my Cookie Dough ice cream is made with coconut flour and oil. The Coconut Company are relatively new but already have a fantastic range of products, all of which are raw, natural & organic. They’re a very eco-concious company with a focus on high quality.
They sell the familiar coconut products such as coconut sugar, coconut oil etc. but also have some more unusual products such as powdered coconut milk (which I’ve tried in my smoothies and love!) vinegars and amino sauces.

And lastly, but most importantly – coconut milk! The main ingredient. It’s important to use full-fat quality coconut milk for my ice creams because the low fat varietities will result in a more icy, solid ice cream whereas full fat makes for the creamiest, softest ice cream! Don’t worry though – it’s the good kind of fat :-)
I love Thai Taste because it’s simply coconut – no added artificial colours, flavourings or gums!
